Catering Glossary


Halal describes conformity with the regulations of the Koran and involves many objects and actions of daily life. Regulations also specify which foods are permitted and how it must be prepared. Blood, pork and intoxicants such as alcohol are generally forbidden. 

The term "halal" was included in the Codex Alimentarius in 1997. This is a collection of norms which apply to food safety and product quality which do not have legal status but which are generally applied in practice.
