food hygiene regulations (LMHV)

The "Lebensmittelhygieneverordnung" (LMHV) regulate hygiene in commercial operations which manufacture, process or sell foods in Germany. The LMHV prescribe minimum requirements in food handling, the most important of which is the self monitoring systems in accordance with HACCP for the prevention of health risks and food poisoning. 

The LMHV require that all personnel are instructed in food hygiene.
