A combi-steamer combines steam cooking with a hot-air convection oven. Hot air and steam can be combined as a cooking method or deployed separately. Combi-steamers are generally sold with a trolley that holds several baking sheets. They facilitate composite cooking processes that achieve lower meat shrinkage, better nutrition retention, low-temperature steaming of delicate foods and other menu-enhancing benefits.
Energy consumption is low (4 to 20 KW) and both electricity and water/ waste water connection is necessary.
