Catering Glossary


Coloring is added to foods in order to maintain or intensify natural color during storage and preparation. These foods are more attractive to consumers as the color suggests freshness and quality. 

Coloring is classified as:

  • natural coloring
  • natural identical coloring
  • artificial coloring (the EU issues regulations for use)

Coloring is a food additive and must be declared. Foods are labeled with the respective E-number (100-180).
