We are legally obliged to inform you about the allergens and food additives contained in the foods we serve.

In Dussmann Service restaurants, diners are informed about allergens and food additives on printed and online meal plans and on information flyers in the restaurant.

And of course in direct communication with Dussmann personnel.

These abbreviations are used on our German meal plans:
W Wheat, R Rye, G Barley, H Oats, Wa Walnut, Ha Hazelnut, Pe Pecan, Pa Brazil Nut, Pi Pistacio, Ma Almond, Mk Macadamia, Ca Cashew

Additives

contains food coloring

preserved or contains perservatives

contains antioxidant

contains flavor enhancer

Contains nitrite curing salts and/or nitrates.

According to the food additives ordinance (Lebensmittelzusatzstoffdurchführungsverordnung LMZDV)

Olives containing  ferrous gluconate (E 579) or ferrous lactate (E 585) must be labeled as such (on our German meal oplans "geschwärzt").

The protection of fresh citrus fruits, melons, apples and pears with certain types of wax is permitted and must be declared: “waxed” (on our German meal plans "gewachst").

Contains phosphates

If food contains sugar substitute and/or sweeteners, the customer must be informed through the declaration “contains sweeteners”.

Contains a source of phenylalanine. Phenylalanine is an essential amino acid. The statement "contains a source of phenylalanine" refers to the presence of the sweetener aspartum, from which phenylalanine is released during the digestive process.

Foods containing more than10g/kg or 10g/ltr E 420, E 421, E 953, E 965 toE 967 must display the warning “excessive consumption may have a laxative effect”.
